Grün, grün, grün sind alle meine Kleider. Äh, meine Zutaten für einen wunderbar frischen und knackigen Gartensalat. Die Markstände strotzen nur so vor verschiedensten Salaten und die Kräuter wachsen und gedeihen in ihren Balkontöpfen. Warum also nicht einfach alles zusammen schmeißen, was es gerade so an feinen grünen Dingen gibt? Grün ist außerdem wegen dem leckeren Kürbiskernöl auch das Dressing. Also los, erfreut euch an dieser grünen Mischung und versorgt euch nebenbei mit einem Haufen Vitamine und Ballaststoff
Für 2 Portionen
SALAT
2 große Handvoll gemischter
Asia- oder Pflücksalat
1 Zucchini
2 Knoblauchzehen
1 EL Olivenöl
1/2 Zitrone
2 Frühlingszwiebeln
einige Basilikumblätter
einige Dillspitzen
1 kleine Handvoll Kürbiskerne
Maldon-Salz (feine Salzflocken)
DRESSING
3 EL Olivenöl
3 EL Kürbiskernöl
1-2 EL weißer Balsamico
1/2 TL Honigsenf
1/2 TL Honig
Salz, Pfeffer
Frühlingszwiebeln in Ringe schneiden, Basilikumblätter grob hacken, Kürbiskerne in einer Pfanne ohne Öl anrösten. Zucchinistreifen auf dem Salat verteilen, Frühlingszwiebelringe, Basilikum und Dill darüber geben.
Für das Dressing alle Zutaten gut verrühren. Den Salat mit Dressing beträufeln und mit Kürbiskernen und Maldon-Salzflocken bestreuen.
