Die Kombination aus einer unbändigen Lust nach etwas orientalisch Angehauchtem und dem Vorhaben, den Kühlschrank leer zu machen, bevor wir in den Urlaub fahren, hat dieses Gericht hervorgebracht: Knuspriges Brot getoppt von frischem Minzjoghurt, knackigen Karotten, warmem Blumenkohl und würzigen Kichererbsen, gekrönt von schwarzem Kümmel, Zitronensaft und Minze. Zum Reinlegen, sage ich euch. Wir haben das Brot selber gemacht, aber natürlich geht es genauso gut mit diesem dünnen Fladenbrot, was man in türkischen oder arabischen Supermärkten bekommt.
Für 3 Personen
200 g Mehl
1/2 TL Zucker
1 EL Olivenöl
Salz
Milch
2 TL Butter
200 g griechischer Joghurt
1/2 Bund Minze
1 TL Zahtar
1/2 TL Sumach
1/2 Blumenkohl
1 EL Butter
1/2-1 TL Ras El Hanut
1 Prise Cayennepfeffer
1 Dose Kichererbsen
1/2 TL Brotgewürz
1 EL Sesam
1 EL Olivenöl
2 lila oder normale Karotten
Saft von 1/2 Zitrone
1 TL Honig
Zitronensaft
Olivenöl
schwarzer Kümmel
Etwas Minze für die Deko beiseite legen, die restlichen Blätter fein hacken und mit Zahtar und Sumach unter den griechischen Joghurt rühren.
Blumenkohl in kleine Röschen teilen und kurz in kochendem Wasser blanchieren. Die Butter in einer Pfanne zerlassen und die Blumenkohlröschen darin mit Ras El Hanut und Cayennepfeffer bei mittlerer Hitze braten, bis die Röschen weich sind.
Kichererbsen abtropfen lassen. In einer Pfanne Olivenöl erhitzen und die Kichererbsen darin mit Brotgewürz und Sesam knusprig rösten.
Karotten schälen und grob raspeln. Mit Zitronensaft und Honig vermischen.
Die Fladenbrote mit Minzjoghurt bestreichen, Karotten, Blumenkohl und Kichererbsen darauf verteilen. Alles mit Zitronensaft und Olivenöl beträufeln, schwarzen Kümmel und restliche Minze darüber streuen.
