Manche mit Walnüssen, mit Schokolade, mit Rosinen oder ganz pur. Wir mögen sie alle. Und besonders gern mögen wir gerade diese Variante hier mit Kardamom, gemahlenen und gehackten Walnüssen und Zartbitterschokolade. Von Freunden inspiriert, haben wir uns angewöhnt, fast jede Woche eins davon zu machen und es dann unter der Woche Stück für Stück als Snack mit in die Arbeit zu nehmen. In Frischhaltefolie eingewickelt hält das Bananabread sich prima einige Tage oder kann auch in Stücken eingefroren werden, so hat man für den nächsten Ausflug immer eine Stärkung parat. Banana Bread mit Kardamom, Walnüssen und Schokolade
Zutaten
- 300 g Mehl
- 2 TL Natron
- 2 TL Backpulver
- 1 Prise Salz
- 1 TL Kardamom
- 120 g Walnüsse
- 120 g weiche Butter
- 150 g weisser Zucker
- 120 g brauner Zucker
- 4 Eier
- 3 Bananen
- 100 g Schmand
- 100 g Zartbitterschokolade
Anleitungen

Ofen auf 175 Grad vorheizen. Die Hälfte der Walnüsse mahlen oder fein hacken und in einer kleineren Schüssel mit Mehl, Natron, Backpulver, Salz und Kardamom mischen. In einer großen Schüssel Butter mit weißem und braunem Zucker cremig schlagen und nach und nach die Eier unterrühren.

Bananen zermatschen und mit Schmand vermischen. Mehl- und Bananenmischung abwechselnd unter das Butter-Zucker-Gemisch rühren, dabei aber nicht zu lange rühren, damit der Kuchen nicht zäh wird. Restliche Walnüsse und Schokolade grob hacken und mit einem Holzlöffel unter den Teig heben.

Teig in eine eingefettete und mit Mehl bestäubte Kastenform füllen und ca. 1 Stunde auf der mittleren Schiene backen.
